Dairy Free Tomato Soup

Ingredients

  • 1 28oz can of crushed tomatoes
  • 1 cup water
  • 2 cups Ajoyo Original Almondmilk
  • 1 tablespoon garlic, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh chopped basil
  • 1 tablespoon olive oil
  • salt & pepper to taste

Directions

  1. In a soup pot, add olive oil, garlic, and all fresh herbs. Stir while cooking over medium-low heat until everything becomes fragrant.
  2. Puree the tomatoes in a blender.
  3. Add tomato puree, water, and Ajoyo Original Almondmilk. Stir to combine.
  4. Simmer over low until ready to serve.
