Dairy Free Tomato Soup
- Serves: 4 servings
- Prep time: 30 minutes
- 1 28oz can of crushed tomatoes
- 1 cup water
- 2 cups Ajoyo Original Almondmilk
- 1 tablespoon garlic, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh chopped basil
- 1 tablespoon olive oil
- salt & pepper to taste
- In a soup pot, add olive oil, garlic, and all fresh herbs. Stir while cooking over medium-low heat until everything becomes fragrant.
- Puree the tomatoes in a blender.
- Add tomato puree, water, and Ajoyo Original Almondmilk. Stir to combine.
- Simmer over low until ready to serve.
